Chicken Shawarma With Yogurt Sauce

Juicy chicken shawarma marinated in spiced yogurt then grilled is a delicious dinner served wrapped in easy flatbread with crunchy vegetables. Shawarma (also spelled shawarmas ,/ shoarma,) is a Middle Eastern dish

WHAT IS SHAWARMA?

Shawarma is meat (most often beef, lamb or chicken) stacked on a vertical spit and grilled low and slow, often all day long. The meat is carved off the side of the spit and served in pita bread or flatbread with your choice of vegetables, sauces, and fries etc.

Ingredients:

1 kg chicken thigh fillets , skinless and boneless

MARINADES :

1 large garlic clove (or 2 small cloves) 1 tbsp ground coriander 1 tbsp ground cumin 1 tbsp ground cardamon 1 tsp ginger past 2 tsp chilli powder/paprika 2 tsp salt 1/2 tsp Black pepper

1 tsp garam masala or ( you can add also tandoori chicken masala) 2 tbsp lemon juice 3 tbsp olive oil / vegetable oil 1 cup yoghurt 1 tsp cumin

Note:

Squeeze of lemon juice Salt and pepper

serve :

flatbreads (pita bread)

Sliced lettuces

fries 🍟


Instructions:

· Combine the marinade ingredients in a large bowl or ziplock bag.(oil,ginger,garlic,blackpaper,coriander,cumins ,lemon juice,,red chilli powder , gram masala or salt) mix together.

· Add the chicken and use your hands to make sure each piece is coated. (If using a ziplock bag, I find it convenient to close the bag then massage the bag to disperse the rub all over each chicken piece.)

· Marinate overnight or up to 2/4 hours.

· Combine the Yoghurt Sauce ingredients in a bowl and mix. Cover and put in the fridge until required .

· Heat grill/BBQ (or large heavy based pan on stove) on medium high. You used little oil on pan.

Place chicken on the grill and cook the first side for 4 to 5 minutes until nicely charred, then turn and cook the other side for 3 to 4 minutes (the 2nd side takes less time). Remove chicken from the grill and cover loosely with foil. Set aside to rest for 5 minutes.


TO SERVE:

  • Slice chicken and pile onto platter  flatbreads spread garlic Sauce.(yoghurt sauce) then put sum chicken pieces , lettuce and fries 🍟.

                                 or

  • To make a wrap, get a piece of flatbread and smear with Yoghurt Sauce. Top with a bit of lettuce and Chicken Shawarma. Roll up and enjoy😊😊😊👇🏻

Yogurts shawarma sauce:

This garlic yogurt shawarma sauce is just unsweetened yogurt, a bit of lemon juice, garlic, and salt and pepper. It’s a perfect light and tangy topping that really complements the rest of the flavours in the shawarma.
